White Chocolate Brownies

Mum made these to serve at our last class…very yummy!

White Chocolate Brownies:

1 cup of flour

1 teaspoon baking powder         

¼ teaspoon of salt

150 grams white chocolate

125 grams butter

200 grams sugar

1 teaspoon vanilla extract

2 teaspoons finely grated orange zest (1 orange)

2 large eggs

1 cup (100 grams) coarsely chopped almonds (or macadamias)

Preheat oven to 180 degrees celcius.  Butter and flour a 20 cm baking pan.  Line with paper.  Mix the flour, baking powder and salt.  Melt the butter and white chocolate together.  Let cool slightly, add the sugar, vanilla extract and orange zest to the butter/choc mixture gradually and mix until combined.  Mix in eggs one at a time.  Fold in flour until lightly blended.  Lightly fold in nuts.

Spoon batter into prepared pan and bake until a toothpick comes out clean in the centre (about 30 to 40 minutes).  Cool the brownies in the pan on a wire rack for at least an hour before cutting.  When cool drizzle white chocolate over the top.
